Today for the very first time, I baked a cake and made frosting from scratch! I also used my brand new bundt cake pan!
The baked cake mix was absolutely outstanding and tastes so much like the boxed kind! Although chocolate cake recipes like the one I was following usually call for cocoa powder, I instead opted for cacao powder for the mix and also used it on the cake pan before adding the batter. I also brushed olive oil instead of using generic cooking spray on the bundt pan since I didn't use simple round pans. (Don't have them right now anyways.)
CAKE BATTER: Dry Ingredients
- 1 Cup - Cake Flour (I used Swans Down)
- 1 Cup - Oat Flour
- 3/4 Cup - Cacao Powder
- 1/2 Cup - Coconut Sugar
- 1 Cup - Truvia: Stevia/Cane Sugar Blend (to taste; Also worth noting: This is a REDUCED sugar blend, meaning there's far more stevia than sugar, which is actually a good thing.)
- 2 TSP - Baking Powder
- 1 TSP - Baking Soda
- 1/2 TSP - Salt
Wet Ingredients
- 1 Cup - Brewed Coffee
- 1/2 Cup - Applesauce (I'm using homemade applesauce instead of pre-made)
- 1/4 Cup - Coconut Oil
- 1 - Egg
- 1/3 Cup - Egg Whites
- 1/3 Cup - Almond Milk (Using unsweetened Silk)
- 2 TSP - Vanilla Extract
DIRECTIONS - Preheat oven to 350 degrees F.
- Sift the cake flour, oat flour, and cacao powder together. After sifting, combine with dry ingredients.
- In a separate bowl, combine all the wet ingredients.
- After combining, mix together both wet and dry ingredients.
- Brush bundt pan with extra virgin olive oil and then dust with cacao powder. Pour batter into pan.
- Bake for 30 minutes / when toothpick comes out clean.
- After removing cake from the pan and letting it cool, add frosting!
Icing was pretty good too, which was made with Truvia Confections (aka: Stevia sweetener), vanilla extract, and plain water. I had to add a little more water sometimes to get to the right consistency until it was no longer too thick, but not too thin. It does harden a teeny bit after sitting on the cake for awhile, but while I was having a slice, I could actually feel the texture melting softly in my mouth. It was really good. I guess I could've made more icing if I was doing a multi-tier cake, but again, since I was using a single-tier bundt pan, I surprisingly had plenty to work with.
ICING: - 1 cup Truvia Powdered Confectioner (Stevia Sweetener) - 1 tsp vanilla extract - Water (originally had 3 tablespoons, but added some more a few times while stirring for better consistency) DIRECTIONS: Mix together ingredients in the bowl. If it's too thick, add a teeny bit more water. Use either an icing offset blade or rubber spatula spreader to spread on top of bundt cake.

Anytime someone mentions a mall, I always think about the Granite Run Mall in Media, PA which was my favorite mall when I was young. It was always such a treat to go shopping there. It's so sad what became of it. Here's a video that someone filmed shortly before it was demolished. I went to Penn State Delaware County (Brandywine now) down the street from there. Used to go to that mall almost every day.

Still have some pieces of that cake left! Plus, earlier this month, I managed to get an unused air fryer at a garage sale. On retail, it's very pricey (about $160+), so I'm glad this one was only $20. Used it this week to make sweet potato fries.
Today is also a celebration for me, because I finally achieved my weight loss goal after exactly 7 months of hard work! Madness to the Method was my go-to theme for the last couple of months, because I love the instrumentals in this one. It was also the song I played when I weighed myself this morning, especially towards the end. (I wanted the moment to feel epic. )

I did a test run on a homemade pizza dough recipe tonight. This recipe below makes one dough ball, but I had three made so the yogurt could be used up:
- 1 cup: Whole Wheat Flour
- 1 cup: Plain Greek Yogurt
- 1 1/2 tsp: Baking Powder - 1/2 tsp: Salt
Preheat oven to 450 F. Mix the ingredients together until you get a dough. On the first pizza, I was trying to follow the recipe, which told me to fold the dough a few times before rolling it out, but it ended up being a small personal crust. For the others, since they already had decent balls going, I skipped the folding part and had bigger pizza crusts as a result.
Spray your pizza pan(s) and transfer crust over. Add desired sauce, toppings, cheese, and seasonings, and let it cook in the top oven rack for 10-15 minutes. Cool off and devour.
First pizza: First attempt. Smaller crust, has vegetables and spinach below the cheese. On top of the cheese is seasonings and pepperoni slices. Second pizza: Simple plain pepperoni pizza. Bigger crust without the vegetables and seasonings. Third pizza: Same as the first one, but without pepperoni and a bigger crust.

Also, hey! Baked some pumpkin cheesecake brownies for New Year's!
Batter recipe: 1 Cup - Oat Flour 1/2 Cup - Cocoa Powder 3 TBSP - Sweetener (to taste) 1/2 TSP - Baking Powder 1/2 TSP - Salt 1 Cup - Pumpkin Puree 2 TBSP - Honey 3 TBSP - Coconut oil 1/4 Cup - Unsweetened Applesauce 2 TBSP - Milk 1 Egg White (reserve yolk) 1 TSP - Vanilla Extract
Swirl: 1/3 Cup - Pumpkin Puree 2 TBSP - Softened Cream Cheese 1-2 TBSP - Sweetener 1 Egg Yolk (Reserved) 1/2 TSP - Cinnamon
Instructions: - Preheat oven to 350 degrees F. - Mix all the batter ingredients together. Pour into brownie dish - Mix your swirl ingredients in a separate bowl. Add dollops on top of the brownie batter and use a toothpick to swirl. - Bake for 20-25 minutes. Let it cool before serving.
